Duchess of Northumberland to open Courtyard Dairy at Settle

Lady Jane Percy, Duchess of Northumberland, will officially open the Courtyard Dairy near Settle later this month.
The specialist cheese shop and cheese maturer is run by Andy Swinscoe and his partner, Kathy. It started trading in December, but its official opening will take place on Wednesday, February 27, at 3pm.
Andy graduated from Sheffield University with a first class honours degree in culinary arts and hospitality. He subsequently received a Queen Elizabeth Scholarship to explore the art of cheese maturing.
It enabled him to study for six months in France under the watchful eye of Hervé Mons, widely regarded as the finest cheese ‘affineur’ (mature) in France.
Andy then joined The Fine Cheese Company in Bath as quality manager for two years, and in 2012, he decided to set up his own business. “I want to sell a unique range of only the best cheeses available in Europe, and to become known as the best place to get the finest cheese,” he said.
